Meatballs
1 pound lean minced beef or turkey
1/2 small onion, finely chopped
2 tsp parsley or thyme
1/2 cup breadcrumbs
1 egg yolk

Place all the ingredients in a bowl and mix throughly.  Use your hands to divide and shape the mixture into little balls.  Can make ahead of time and chill in the fridge if you like.
Heat 1 Tbsp of olive oil in a frying pan over medium heat.  Fry the meatballs, turning them frequently, until they are lightly browned all over, about 5 to 10 minutes. 
(I then like to add them to tomato sauce and let them simmer in the sauce while the rest of dinner finishes cooking.)
