Sue's Enchiladas

One dozen corn tortillas

1 pound ground beef or turkey

1 small onion

1 small can green chilies (diced)

1 small can tomato paste

1 small can olives

1 pound sharp cheddar cheese

1 package Lawry’s enchilada sauce mix

 

Make Sauce:

3 cups  water

Tomato paste

Seasoning mix

 

Mix paste and seasoning mix first.  Then slowly add water.  Bring to a boil.  Then simmer for 15 minutes, stirring frequently.  LET IT COOL!

 

Brown the beef or turkey, dice onion and grate cheese.

Dip one tortilla at a time in the sauce.  Place on a dish and fill with meat, onions, chilies, olives, and cheese.

Roll and place in baking pan.

Bake at 350 degrees for 30 – 40 minutes.
