3 cups milk
2 cups or less of water
5 lbs. of flour
¼ cup of butter
2 cups of sugar
4 eggs plus one egg at end
3 ½ Tbs. salt
3 yeast cakes
¼ cup faintly warm water
Bring liquids to boil on medium heat.
Remove and add butter, sugar and salt.
Set to cool until barely warm.
Empty flour into big pan.
Put in milk and water.
Add well beaten eggs and yeast that has been dissolved in the water.
Mix with flour with spoon.
Knead with your hands for 15 mins.
Let it rise until it has doubled. Put it in the oven.
After it has risen knead one more time for 5 mins.
Grease pans generously.
Don’t fill bread pan more than half full of dough.
Use angel cake pan or roast pan if you like.
To form bread, turn edges under the turn a little.
Set it aside let it rise again so it is ¾ the size of the pan.
Use one beaten egg and brush on to tops of bread.
Set oven to 350 for 30 mins. – for small loaves. If you make larger one cook for 45 mins.
Dorothy says to cut the recipe in half, otherwise you will have a lot of bread.
