1 pound ground turkey or beef
1 cup cottage cheese
1 package taco seasoning
1 clove garlic
½ of an onion minced
9 ounce package of Fritos
2 (8 oz) cans of tomato sauce
1 cup sour cream
1 (5 oz) can slice ripe olives
4 Tbsp diced Ortega green chilies (medium hot)
2 cups grated Jack Cheese
In a 2 ½ quart casserole, combine meat, garlic and onion. Microwave on high 5 to 7 minutes, stirring and breaking up after 3 minutes. Drain grease. Add tomato sauce and heat on high 2 to 3 minutes.
Meanwhile, combine olives, cottage cheese, sour cream and chilies in a separate bowl.
In a 3 quart casserole layer ½ of the Fritos, ½ of the meat mixture, ½ of the creamy mixture and ½ of the grated cheese. Repeat layers, ending with cheese. Microwave on 70% power (medium high) for 7 -8 minutes or until heated through.
