Chocolate Flax Seed Cookies

1/2 cup whole flax seeds 1 1/2 cups buttermilk 2 cups flour 1/2 cup ground flax seeds (flax meal) 1 cup oats 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 1/2 tsp cinnamon 1/4 tsp nutmeg 1 cup butter or 1 cup canola oil 1 cup sugar 2 eggs 2 Tbsp vanilla extract 1/2 cup rasins 1 bag of chocolate chips
In small bowl soak whole flax seeds in buttermilk. Preheat oven to 375 degrees.
Meanwhile, in a large bowl, measure all dry ingredients including flour, flax meal, oats, baking powder, baking soda, sea salt and spices and combine until well blended. Don't add the raisins or chocolate chips yet.
In a seperate bowl beat butter and sugar together. Add one egg at a time. Add vanilla and mix well again.
Combine liquid and dry ingredients and mix together until all ingredients are evenly blended. Add raisins and chocolate chips and mix.
Put on cookie sheet with parchment paper or spray cookie sheet with cooking spray. Using large spoon, take dough and make balls. Place on cookie sheet and bake for 15 minutes.
