3 pounds of stew meat (Or you can do one pound meat, one pound pork and one pound lamb)
1 can or jar of chipotle chilies
1 can of tomato paste
1 jar of your favorite salsa
One bottle of middle ale beer
1 bag tortilla chips
Put your pressure cooker with out the lid pot over high heat.
Put a big metal bowl over the top of the big pot.
Put your 3 pounds of meat in the metal bowl. Put 1 ½ tsp of salt on the meat.
Toss the meat and salt. Pour 2 tsp. of peanut oil over the meat.
Brown the meat in batches. About one pound at a time, if you over crowd the meat will not brown properly. Take each batch out of the pot and put in another big metal bowl.
Put big pot back on high on the stove and pour in 12 ounces of medium ale beer. Scrap around the bottom of the pot to get the little bits of meat still stuck on the bottom of the pot.
Then put in:
1 Tbs. of tomato paste
1 Tbs. of chili powder
1 tsp. cumin
3 big handfuls of tortilla chips – break them up good as you put them in.
1 – 16 ounce container of your favorite salsa
Optional: 2 chopped chipotle peppers and 1 tbs. Adobo sauce
Finally put the meat you browned back into the pot.
Put the lid on the pressure cooker. When steam starts to come out, put the heat down to medium or lower so that the pressure cooker is barely whistling and then wait 25 minutes.
Press the pressure release button or run it under cold water.
If you don't have a pressure cooker you can cook it in a slow cooker for 6-8 hours.
You can serve with cheese, sour cream, green onions, or cilantro.
