Dee Dee's Carrot Cake
(The world's best!)

2 cups sugar

4 eggs

¾ cup oil

2 cups flour

1 tsp salt

2 tsp baking soda

2 tsp baking powder

2 tsp cinnamon

3 cups carrots, grated

1 ½ cups nuts, chopped

1 medium can crushed pineapple, drained

 

Beat eggs with electric beater until frothy.  Add sugar and mix well.  Add the remaining ingredients and mix well.

Bake in a 9” X 13” pan at 350 degrees for an hour.

 

Frosting:

8 ounces cream cheese

½ cup butter

1 cup nuts, chopped

1 box powdered sugar

 1 cup coconut (optional)

1 tsp vanilla

½ cup rasins

1 small can crushed pineapple

 

Set the cream cheese out on the kitchen counter while the cake is baking so that it will soften.  After the cake has cooled, mix the frosting’s ingredients together and frost the cake.
